Light yet satisfying, it’s perfect for chilly evenings, when you want something soothing without being heavy. Pair it with crusty bread or a fresh green salad to make it a simple, warming dish.

INGREDIENTS

  • Il Nonno Slow Roasted Beef Mezzelune Piccole OR Il Nonno Chicken, Mushroom & Thyme Mezzelune Piccole

  • 20ml olive oil

  • ½ brown onion

  • 2 cloves of garlic finely chopped

  • 1 carrot peeled and diced

  • 2 sticks of celery diced

  • 2L chicken stock

  • 500ml water

  • 40g fresh parsley

  • 2tbsp grated parmesan cheese

  • 2 eggs whisked

  • Season to taste

METHOD

  1. In a pot, saute olive oil, garlic, diced carrot and celery for 5 minutes

  2. Add chicken stock and water

  3. Bring to the boil and boil for 15-20 minutes

  4. Stir through cooked il Nonno Slow Roasted Beef Mezzelune Piccole

  5. Cook for 5 minutes

  6. Finish by whisking through eggs, grated parmesan cheese and fresh parsley
